Ingredients
500gfresh white fishcubed
1/2cuplime juice
1/2cuplemon juice
1red onionfinely chopped
1tomatodiced
1cucumberdiced
1jalapeñominced
2tbspcilantrochopped
Salt and pepper to taste
Instructions
Place the cubed fish in a large, non-reactive bowl (glass or ceramic). Pour the lime, lemon, and orange juices over the seafood, ensuring it is fully submerged.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 1 hour, or until the fish and shrimp turn opaque and firm. The acid in the citrus juices will "cook" the seafood.
Once the seafood is "cooked," drain off most of the citrus juice, leaving a small amount in the bowl to keep the ceviche moist and flavorful.
Mix in onion, tomato, cucumber, jalapeño, and cilantro. Gently toss everything together to combine. Season with salt and freshly ground black pepper to taste.
Cover the ceviche and refrigerate for another 15-20 minutes to allow the flavors to meld together.
Serve the ceviche chilled with tortilla chips or tostadas on the side. Garnish with additional cilantro and lime wedges for extra zest.
