Instructions
In a bowl, whisk egg whites until frothy.
Heat butter in a non-stick pan over medium heat.
Gently pour the whipped egg whites into the pan, spreading evenly.
Cook for 2-3 minutes until the bottom is set but the top is still slightly runny.
Add chopped vegetables and cheese (if using) to one side of the omelette.
Fold the omelette in half, cover the pan, and cook for another 1-2 minutes until fully set and fluffy.
Season with salt and pepper, garnish with fresh herbs, and serve.
