Instructions
Pat the scallops dry with paper towels to remove excess moisture. This helps them sear properly. Season both sides with salt and freshly ground black pepper.
In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.
Carefully place the scallops in the skillet, ensuring they are not touching each other. Sear for about 2-3 minutes on one side until a golden crust forms. Avoid moving the scallops around to get a nice sear.
Flip the scallops using tongs and sear the other side for an additional 1-2 minutes, or until the scallops are opaque in the center and have a nice golden crust.
