Salmon Tacos
Ingredients
- 400 g salmon fillets
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 2 cups shredded cabbage mix of red and green
- Salt and pepper to taste
- 8 small tortillas
- 1 avocado sliced
- 1/2 cup sour cream
- 1 lime juiced
- 1/4 cup fresh cilantro chopped
Instructions
- In a large mixing bowl, combine the shredded cabbage and chopped cilantro. In a small bowl, whisk together the sour cream, lime juice, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well coated. Set aside to let the flavors meld while you prepare the salmon.
- Rub salmon with olive oil, and coat with the chili powder, cumin, salt, and pepper.
- Heat a large skillet over medium-high heat. Add the salmon fillets to the skillet and cook for 4-5 minutes per side, or until the salmon is cooked through and easily flakes with a fork. The spices should form a flavorful crust on the outside.
- While the salmon is cooking, warm the tortillas in a dry skillet over medium heat, or directly over a gas flame for a few seconds on each side until they are soft and pliable. Keep them warm by wrapping them in a clean kitchen towel.
- Once the salmon is cooked, break it into large chunks with a fork. Place a few pieces of salmon in the center of each tortilla. Top with a generous portion of the prepared slaw and a few slices of avocado.
