Ingredients

  • 500 g fresh white fish cubed
  • 1/2 cup lime juice
  • 1/2 cup lemon juice
  • 1 red onion finely chopped
  • 1 tomato diced
  • 1 cucumber diced
  • 1 jalapeño minced
  • 2 tbsp cilantro chopped
  • Salt and pepper to taste

Instructions

  • Place the cubed fish in a large, non-reactive bowl (glass or ceramic). Pour the lime, lemon, and orange juices over the seafood, ensuring it is fully submerged.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 1 hour, or until the fish and shrimp turn opaque and firm. The acid in the citrus juices will "cook" the seafood.
  • Once the seafood is "cooked," drain off most of the citrus juice, leaving a small amount in the bowl to keep the ceviche moist and flavorful.
  • Mix in onion, tomato, cucumber, jalapeño, and cilantro. Gently toss everything together to combine. Season with salt and freshly ground black pepper to taste.
  • Cover the ceviche and refrigerate for another 15-20 minutes to allow the flavors to meld together.
  • Serve the ceviche chilled with tortilla chips or tostadas on the side. Garnish with additional cilantro and lime wedges for extra zest.
